- Begin by dicing the large tomato and finely chopping the red onion. In a medium bowl, combine the diced tomato, red onion, fresh spinach, crumbled feta, shredded mozzarella, and dried oregano. Gently toss the mixture until all ingredients are evenly distributed.
- To ensure your quesadilla isn’t soggy, squeeze the fresh spinach to remove any excess moisture.
- Lay out three flour tortillas on a clean and flat surface.
