- Start by boiling a pot of water. Once boiling, add the chow mein egg noodles and soak them for 30 seconds to 1 minute until they soften. Drain the noodles in a colander, shaking off excess water.
- In a medium bowl, mix together the dark soy sauce, regular soy sauce, oyster sauce, fish sauce, granulated sugar, and water. Stir until the sugar completely dissolves.
- Heat a wok over medium-high heat and add corn oil. Toss in the yellow onion and green onion whites, sautéing for about 1 minute until fragrant and slightly translucent.
- In the same wok, add the drained chow mein noodles, spreading them out to crisp up. Let them fry for about 2 minutes before flipping to crisp the other side.
- Incorporate the sautéed onions, green onions, and bean sprouts back into the wok with the crispy noodles. Pour the prepared sauce over and mix carefully.
- Remove the wok from heat and drizzle sesame oil over the noodles. Toss everything together before serving immediately.
