Ingredients
  

For the Noodles
  • 1 package Chow Mein Egg Noodles Fresh 'chow mein' or 'Hong Kong style'
For the Vegetables
  • 1 medium Yellow Onion Can substitute with shallots
  • 2 stalks Green Onions Use both whites and greens
  • 1 cup Bean Sprouts Shredded cabbage can be used as a substitute
For the Cooking Oils & Sauces
  • 2 tablespoons Corn Oil Can substitute with vegetable or canola oil
  • 1 tablespoon Sesame Oil Add at the end for flavor
  • 2 tablespoons Dark Soy Sauce
  • 1 tablespoon Regular Soy Sauce Use reduced sodium if preferred
  • 1 tablespoon Oyster Sauce Vegetarian mushroom sauce can be substituted
  • 1 teaspoon Fish Sauce Omit for a vegan version
For the Flavor Enhancers
  • 1 teaspoon Granulated Sugar Can substitute with honey or agave syrup
  • 2 tablespoons Water To dissolve sauce ingredients

Step-by-Step Instructions
  1. Start by boiling a pot of water. Once boiling, add the chow mein egg noodles and soak them for 30 seconds to 1 minute until they soften. Drain the noodles in a colander, shaking off excess water.
  2. In a medium bowl, mix together the dark soy sauce, regular soy sauce, oyster sauce, fish sauce, granulated sugar, and water. Stir until the sugar completely dissolves.
  3. Heat a wok over medium-high heat and add corn oil. Toss in the yellow onion and green onion whites, sautéing for about 1 minute until fragrant and slightly translucent.
  4. In the same wok, add the drained chow mein noodles, spreading them out to crisp up. Let them fry for about 2 minutes before flipping to crisp the other side.
  5. Incorporate the sautéed onions, green onions, and bean sprouts back into the wok with the crispy noodles. Pour the prepared sauce over and mix carefully.
  6. Remove the wok from heat and drizzle sesame oil over the noodles. Toss everything together before serving immediately.

Notes
