Step-by-Step Instructions
  1. In a medium saucepan, combine diced pineapple, granulated sugar, apple cider vinegar, ground turmeric, cayenne pepper, ground ginger, and salt. Stir well and bring to a gentle simmer.
  2. Allow the mixture to simmer for about 1 hour, stirring occasionally until the pineapple pieces are translucent and the syrup thickens.
  3. Remove the saucepan from heat and drain excess syrup using a slotted spoon.
  4. While warm, roll each pineapple piece in additional granulated sugar until fully coated and place on a drying rack.
  5. Allow the coated bites to dry for several hours at room temperature.
  6. Once dried, transfer to an airtight container and store at room temperature.
