  • 1 cup toum (garlic sauce) or aioli/homemade garlic mayo for serving

Preparation and Cooking Steps
  1. Prepare the whole chicken by cutting along the backbone and flattening it.
  2. In a mixing bowl, whisk together paprika, garlic, oregano, lemon juice, olive oil, brown sugar, sea salt, and red wine vinegar.
  3. Apply the marinade generously to the chicken, then seal and marinate in the refrigerator for at least 30 minutes or overnight for optimal flavor.
  4. Preheat the grill or oven to 425°F (220°C) and prepare for cooking.
  5. Cook the marinated chicken skin-side up for approximately 45 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 10 minutes before serving with lemon wedges and toum.
