  2. Rinse and dry the cauliflower, cut off the green leaves, and slice into thick steaks, about 1 to 1½ inches in width.
  3. In a medium bowl, combine olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper. Whisk until fully blended.
  4. Drizzle the seasoned oil mixture over the cauliflower steaks, ensuring even coating on both sides.
  5. Arrange the coated cauliflower steaks on a lined baking sheet and roast for 20-25 minutes, flipping halfway through.
  6. Prepare the buffalo sauce by combining hot sauce, melted vegan butter, apple cider vinegar, and maple syrup in a saucepan over medium-low heat.
  7. After roasting, brush buffalo sauce over each steak until well-covered.
  8. Return the steaks to the oven and bake for an additional 5-10 minutes until the sauce caramelizes slightly.
