Method
 

Step-by-Step Instructions
  1. Prepare the tofu by pressing it for 3-4 hours to remove excess moisture and poke holes all over it.
  2. Marinate the tofu by whisking together soy sauce, chili garlic sauce, spicy brown mustard, maple syrup, and nutritional yeast. Coat the tofu with marinade and refrigerate for 24 hours.
  3. Preheat the oven to 400°F (200°C) and bake the marinated tofu on a lined sheet for 20 minutes.
  4. Make the glaze by mixing brown sugar and spicy brown mustard, then heat until dissolved.
  5. Glaze the tofu and bake again for an additional 10 minutes, then glaze once more and bake for 15-20 minutes.
  6. Let the tofu rest for about 10 minutes before slicing and serving.
