  • 1/4 cup walnuts or pecans toasted

  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup

Preparation Steps
  1. Begin by thoroughly washing 4 cups of mixed salad greens under cold water, then spin dry in a salad spinner. In a large bowl, toss together the cleaned greens.
  2. Incorporate 1 cup of sliced strawberries, 1 segmented orange, and ½ cup of thinly sliced cucumber into the bowl with the greens. Gently toss.
  3. In a small bowl, whisk together ¼ cup of olive oil, 2 tablespoons of orange juice, 1 tablespoon of lemon juice, and 1 teaspoon of honey or maple syrup until emulsified.
  4. Drizzle the prepared vinaigrette over the salad mixture and toss gently to coat all ingredients.
  5. Sprinkle ¼ cup of crumbled feta cheese and ¼ cup of toasted walnuts or pecans over the top of the salad.
