Ingredients
  

For the Greens
  • 4 cups Mixed greens (spinach, arugula, or watercress)
For the Fruit
  • 4 Clementines Can substitute with oranges or tangerines
For the Crunch
  • 2 Mini cucumbers Thinly sliced, Persian cucumbers work best
  • 1/2 cup Salted pistachios Can substitute with almonds or walnuts
For the Creaminess
  • 1 Avocado Thinly sliced
  • 1/2 cup Goat cheese Can substitute with feta or ricotta salata
For the Dressing
  • 2-3 tablespoons Honey White Balsamic Dressing
For the Aromatics
  • 1/4 cup White onion Thinly sliced

Method
 

Preparation
  1. Begin by washing and drying your selected greens. In a large bowl or on a serving platter, place a generous layer of these vibrant greens.
  2. Peel and segment the clementines, then distribute them evenly over the greens. Thinly slice the mini cucumbers, avocado, and white onion, placing them artfully on top of the salad.
  3. Drizzle 2–3 tablespoons of the Honey White Balsamic Dressing over the salad and gently toss the ingredients together.
  4. Sprinkle crumbled goat cheese and salted pistachios generously over the top of the salad. Season with freshly cracked black pepper.
