Step-by-Step Instructions
  1. Prepare the Pie Crust: Pulse flour, sugar, and salt in a food processor. Whisk egg, vinegar, and ice water, then blend with butter until coarse. Chill for 30 minutes.
  2. Pre-Bake the Crust: Preheat oven to 375°F. Bake crust for 15 minutes. Brush with egg white and lower temperature to 350°F.
  3. Make the Filling: Whisk eggs, pumpkin, sour cream, bourbon, and vanilla in a mixing bowl. Heat maple syrup and mix in cream. Combine with pumpkin mixture.
