  1. In a large resealable bag or bowl, combine the marinade ingredients: orange juice, lime juice, olive oil, minced garlic, achiote powder, cumin, coriander, oregano, salt, and pepper.
  2. Add the chicken pieces to the marinade, ensuring each piece is thoroughly coated. Seal the bag or cover the bowl tightly, and let it marinate for 30 minutes at room temperature or up to 4 hours in the refrigerator.
  3. While the chicken marinates, preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade, discarding any excess. Place the chicken directly over the heat and grill for about 20 minutes, flipping every 5 minutes.
  5. After 20 minutes, move the chicken to an area of the grill with indirect heat and continue cooking for an additional 15-20 minutes until reaching 160-165°F.
  6. Once cooked, remove the chicken from the grill and tent it loosely with aluminum foil. Let it rest for 10 minutes.
