For the Dressing
  • 1/4 cup Extra Virgin Olive Oil Light oils can be used as an alternative.
  • 2 tbsp Honey Maple syrup is a great vegan substitute.
  • 2 tbsp Balsamic Vinegar Rice vinegar can be used for a lighter taste.
  • 1 tbsp Dijon Mustard Yellow mustard can be used for a milder flavor.
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Method
 

Preparation Steps
  1. Wash and thoroughly dry the mixed salad greens. Place them in a large salad bowl.
  2. Gently rinse the fresh blueberries under cold running water, then pat them dry.
  3. Roughly chop the shelled pistachios and sprinkle them over the salad greens.
  4. Crumble the feta cheese and sprinkle it evenly across the salad.
  5. Thinly slice the red onion and mix it gently into the salad.
  6. In a small bowl, whisk together the olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper until fully emulsified.
  7. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
  8. Taste the salad and adjust seasonings if needed, then serve immediately.
