  • 4 large eggs room temperature for even cooking
  • 1 sheet puff pastry dough thawed
  • 1 egg wash 1 beaten egg + 1 tbsp water
  • to taste kosher salt regular table salt works too
For the Filling
  • 2 oz Boursin cheese or goat cheese
  • 4 slices prosciutto or bacon/smoked salmon
  • 3 tbsp green onion finely chopped
  • 1.5 tbsp Everything But The Bagel Seasoning or sesame seeds
For the Topping
  • 2 cups arugula or mixed greens/spinach
  • 1 tbsp olive oil or avocado oil
  • 1 tbsp lemon juice freshly squeezed
  • 0.25 cup Parmigiano cheese freshly shaved

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Allow the puff pastry sheet and large eggs to come to room temperature for about 30 minutes. Roll out the puff pastry and trim edges to fit the baking sheet.
  3. Prick the pastry base with a fork and brush with the egg wash. Sprinkle the edges with Everything But The Bagel seasoning.
  4. Bake the pastry in the oven for 10 minutes or until lightly golden.
  5. Spread the Boursin cheese evenly over the pastry and crack the eggs on top. Sprinkle with kosher salt.
  6. Return the tart to the oven and bake for an additional 12-14 minutes until the egg whites are set.
  7. Toss the arugula in a bowl with olive oil, lemon juice, and a pinch of salt.
  8. Cool the tart slightly, top with the arugula salad, slice into portions, and serve warm.
