Step-by-Step Instructions
  1. Blend the pudding base by combining soy yogurt, apple butter, Medjool dates, miso paste, vanilla extract, cinnamon, cardamom, and soy milk in a high-speed blender for about 30 seconds until smooth.
  2. Transfer the blended mixture into a medium bowl and whisk in chia seeds. Let sit for 5 minutes.
  3. Refrigerate the mixture for at least 1 hour.
  4. Prepare the crumble by pulsing oats, walnuts, Medjool dates, and salt in a food processor until coarse. Toast on a baking sheet at 350°F for 10-12 minutes.
  5. Sauté diced apples with a splash of maple syrup and cinnamon for 5–7 minutes until tender.
  6. Assemble by layering chia pudding, warm sautéed apples, and sprinkle with walnut crumble in serving jars.
