- Preheat a non-stick skillet or griddle over medium heat for about 2-3 minutes.
- Spread a generous layer of softened unsalted butter on one side of each slice of sourdough bread.
- On the unbuttered side of two slices, spread about 1 tablespoon of apple butter each and layer slices of creamy Brie cheese.
- Add thin slices of apple and sprinkle fresh thyme leaves on top of the Brie if desired.
- Top with the remaining slices of bread, buttered sides facing out, and press down gently.
- Carefully place the assembled sandwiches in the heated skillet and cook each side for about 3-4 minutes, or until golden brown.
- Remove from the skillet, let cool for a minute, then slice each sandwich in half to serve.
