Step-by-Step Instructions
  1. In a medium skillet over medium heat, cook the turkey bacon until crispy, about 5-7 minutes. Remove the bacon and chop it into bite-sized pieces.
  2. In the same skillet, add the finely chopped yellow onion and sauté over medium heat until soft and translucent, about 5-7 minutes.
  3. In a bowl, whisk together the eggs, milk, salt, and smoked paprika. Melt butter in the skillet, pour in the egg mixture, and cook until soft-set and fluffy, about 4-5 minutes.
  4. On each tortilla, layer bacon, onions, scrambled eggs, cheese, diced tomatoes, and avocado. Fold in the sides and roll tightly.
  5. Preheat air fryer to 390°F (200°C). Place burritos seam-side down in the basket. Fry for 5 minutes, flip and fry for an additional 3-5 minutes until golden.
  6. Combine sour cream, mayo, lemon juice, chopped basil, and salt in a bowl for the dipping sauce. Chill until ready to use.
