  • 8 oz Fusilli pasta or gluten-free pasta
For the Dressing
  • 1 medium Avocado slightly ripe for best texture

  • 2 tbsp White wine vinegar can substitute with apple cider or rice vinegar

  • 2 tbsp Nutritional yeast optional, can substitute with vegan parmesan
For the Garnish
  • 2 stalks Green onions can use shallots instead
  • 1-2 cups Crunchy veggies e.g., bell peppers, cucumbers

Preparation Steps
  1. Boil a large pot of salted water. Add fusilli pasta and cook according to package directions until al dente, about 8-10 minutes. Drain and return to pot.
  2. Drizzle olive oil over warm pasta, toss to coat, and add a few ice cubes to cool the pasta quickly. Stir gently for about one minute.
  3. In a food processor, combine avocado, spinach, herbs, white wine vinegar, garlic, and nutritional yeast. Blend until smooth and creamy.
  4. Add the creamy dressing to the cooled pasta in the pot and introduce any additional ingredients like chickpeas and crunchy veggies. Stir gently to combine.
  5. Slice green onions and sprinkle them over the salad. Serve immediately or refrigerate for up to 30 minutes for flavors to meld.
